This is Martina Franca’s most recognized cured meat, the result of meticulous work by our artisans.
After the cutting and salting phase, Capocollo of Martina Franca is marinated with “vincotto” (literally cooked wine) and local fragrant aromas, and then filled strictly by hand.
The unique aroma comes from the smoking phase with local oak hand almond husk; finally, the Capocollo is left to mature in our Mediterranean-climate to give rise to a high-quality product, recognizable with eyes closed!
SWEET STIRRUP SALAMI

Salami is made from the meat of pigs
raised exclusively in Italy.
The special grinding using the “knife point” technique
and the exact balance between lean and fat mass,
make it an impeccable product that can be enjoyed in company
between a chat and a glass of wine.

Sweet Soppressata requires a delicate preparation and smoking process
that reflects the Apulian territory in full measure.

RED WINE IGP PUGLIA SAGGITTARIO

With an all-Apulian character, this red wine vividly accompanies the typical dishes of the Itria Valley. Full-bodied, expertly tannic and good drinking, it is characterized by pleasant hints of red fruits and cherries under spirits with slight spicy notes.
Fresh homemade pasta dishes, roast meats and field vegetables are the perfect pairings for this harmonious and characterful wine.
Serve at a temperature of 16°-18° C.
